1 2eggs and added egg white with zucchini and tomatoes
ReplyDelete2 tuna with this eggplant dip I made last night! it was great it replaced my mayonnaise that I love so much.
I roasted an eggplant with 3 cloves of garlic and 1/2 an onion for 40 min then scooped out the eggplant add the roasted onions and garlic at added 1/4 cup of olive oil in the magic bullet and there you have it!
oh yah fresh basil too
3 butternut squash lasagna! it turned out great and the kids liked it too! Although they did cover it with cheese which nearly killed me!

ReplyDeleteWill get you the bacon brand, will be buying it this weekend - it comes frozen and the label is a stick on so the left over package I have has no label, but it is nitrate free, has no sugar, primary ingredient is salt...
Meals for the Chumpies:
meal 1: 3 eggs and sautted spinach
Snack: apple
Meal 2: bison chili
Snack: lara bar, nuts
Meal 3: pork chop, baked sweet potatoe, cauliflower and brocoli
Snack: will have chai tea with coconut milk...
We are both feeling good, we just wish we had more time for excercise. With all of the meal planning, work and kids, we do not have much time for excercise. I am hoping it is the weather/darkness, as we both have been pretty tired lately. onto another day :)

I had my spin class tonight and my energy was AWESOME! Normally, I have to drag myself to my class cause I'm so tired and don't feel like going. Today was totally the opposite and I found I was able to push myself in my class. Wicked!

Ok people, this kale chip recipe was so easy and I was skeptical, but they are actually really good. heat oven to 350, tear up kale into "chip" sized pieces, mix in bowl with some olive oil, and season (I used paprika, chipotle chilli powder and salt, but you would just use salt). Spread on a baking sheet and bake for 12-15minutes (until kale is dark green but not brown). Great way to get more dark "greens" in your diet.
I'm definitely going to try that eggplant recipe! Sounds awesome!
I have a long day tomorrow as I have to teach on Bowen Island. Fingers crossed for no snow so that my commute to the 7am ferry doesn't suck!
