Claudia - the hash is amazing! It's ground beef (grass fed), grated yams, onions, peppers etc - all topped with fried eggs - it's become a staple for us and it's great leftover (I have it packed for my lunch today!)

The snacking thing is going ok - I also am worst when I am at my desk all day - I am on alot of calls and am so used to snacking while I do it. Today I had a really early breakfast - so I brought 1 hard boiled egg and just ate it - now I will be fine until lunchtime - slowly but surely will get rid of my snack attacks!

Sweet Potato Hash
ReplyDelete1 large sweet potato(yam)
1 onion
1 pepper(red, orange, or yellow)
1 lb organic ground beef
Salt & pepper to taste
Coconut oil
Eggs
Brown the beef in a pan, drain and set aside.
Peel yam and grate on a cheese grater, dice up onion and pepper.
Heat a dollop of coconut oil in a large pan, when hot add the onion and peppers and sauté for a couple minutes. Add the grated yam and cook until heated through and browning. Add the cooked beef and sauté for another couple of minutes. Season with salt and pepper. Serve with a couple of over easy eggs on top.

Tonight we had a staff team party - there was wine, brownies, oreos, tons of candy, sushi etc - I just ate my salad and a few cashews and was completely satisfied - didn't feel "deprived" at all - felt great!
